   I am painting over stained woodwork which was rubbed down and one coat of Zinsser stain block applied. I have then undercoated with one coat which still appears not ready for glossing, so I am asking is it better to apply two undercoats and one gloss, or one undercoat and two top coats.

   Just sand over the surface and re undercoat followed by a gloss coat when dried, job done!
