my brick shed is to be 3.5M by 5.3M made out of single wall of concrete blocks. I have several tall trees 2-3Meters away. what would be the recommended depth and width of my foundation to be dug

If you have close trees, think about laying a raft instead, this would be a better option anyway as it would be your shed floor aswell.

ill look into that. but if i was to use footings what would be the recommended depth due to trees being nearby. 1 Metre?

it would normally be .50m below any roots present.
