with the increase in popularity of these sheds it has sprung to mind! should the shed itself be earthed when installing electrics to it???

Yes, any exposed metal work, including a buildings framework (non matter now small this building/Shed is) should be bonded.
I'd drop an earth rod in next to it and connect to the shed with a compression ring, nut & bolt.
