Looking to move our boiler into the garage and create a small toilet, need to get the boiler moved first so we can crack on with our bathroom upstairs.

The walls are single skin, no damp, upto a timber joist flat roof.

can anyone please advise on type and stud size and insulation to use? I’d like to bring level to the brick then plaster over?

Instead of battening out/stud wall, I would use a wall lining system and fix insulated board to it.

Among other benefits to the system, it also allows the exact depth you need to leave the boards flush with the brick (or where you need them)
