Got a lot of varnishing to do, door casings, doors, architrave and skirtings for the whole house, what are the best brushes to use, and what sizes ?

The architrave are 45mm width, skirtings 95mm depth.

Go for a 1" & 2" A quality brush will give the best finish. Purdey or Hamilton will serve you well, you can also consider useing a slightly larger brush for your doors. Bear in mind that the application of any stain/varnish without the correct prep, can ruin the look of the finest wood. If you are in anyway unsure, post again for more advice, and let us know what product you intend to use, Got to go back to cutting my hedge.

I am using Ronseal satinwood in matt finish.
Was going to lightly sand down using 1200 grade paper before giving 2 coats.

Your choice of abrasive is ok, you may need to use a filler on some areas. If so Brummer/stopper filler is about the best you can get, give all areas a good dust off prior to application and lightly sand between coats.
Always sand with the grain of the timber and never against it. Best of luck.
