So Jord, in an industrial kitchen with say 20kg of button mush to prep, your gonna wipe every single one ...... really ??

Things tend to be tight for time always

Wiping 20kg (or more) of mush just ain’t gonna happen

True, you don’t wanna soak them but, in a filled sink, chuck em in, quick agitate and lift out with a spider and drain

As to peeling mushrooms ,,,,,, that hasn't happened since war times

Some mush, say morels, a dry brush is better as they’re rather craggy

Sometimes, and especially with wild mush, there is no option other than a quick dunk and drain as they tend to be ‘enriched’ with soil, sand and bugs

No simple wipe over will fully clean them and who wants a gritty cepe in their risotto ?

For starters (pun not intended but I'll take it), I was addressing ElecCEng in a jokey/half serious manner (three days ago), seconds, I rather think when cooking lunch or dinner in a modest home not an industrial kitchen I don't have to adhere to Le Gavroche's speed at turning out a few chestnuts, mains, there's no strict rules in cooking I believe, just as well because getting if one is getting chastised for preparing mushrooms then it's better off getting a kebab on the way home, and for dessert, it's actually 'cep.' :D

Anyway, what's the problem? :cool:
 
Nothing so personal! The thread had seemed to diverge into a prime time cooking extravaganza. Now it seems marriage guidance and relationship advice are here too...

If your referring to me, that’s fine and happy to give food related advice - please just ask

Sorry Jord, really wasn't having a pop at you and maybe I've mixed up who was talking about mushroom s in the first instance (3 days ago as you said, I missed that)

I was just having a laugh at your mushroom wiping comments that all,,, just attracted my childish nature and I've been in an argumentative mood all day with a few of my mates debating the hot topics in the news - so just carrying on here for a change of scene !

As to cooking at home versus a pro kitchen, oh yeah, huge difference I agree, and so there should be,,,, but not in all aspects (scrambled egg at home in a microwave should be a punishable crime in my opinion) Also, in a pro kitchen, its the total opposite to what you mention - 'there's no strict rules in cooking I believe' - That comment couldn't be further from the truth actually

And as for Le Gavroche, being French they would most certainly spell 'cepe' with an 'e'

Maybe I took the washing advice too seriously for my own good

But I did try to add some additional info to the conversation, take it or leave it but could be useful next time you need to prep 20kg of mush :)

I worked in hotels when I was younger in the kitchen and maintenance hard graft but best times of my life

That’s good to hear Spark, hard graft indeed but mixed with plenty of fun and good times

I started off in hotels as well but then found the split shifts, weekends and too many late shifts interfering with my social life !

Yes I was young and naive and perhaps expecting more work/life balance, difficult in that sector

Now been in contract catering for 25 years, still hard graft but much better work pattern generally speaking

Did you have to wash mushrooms whilst in the kitchen ? :)

Washed a lot of pans and plates didn't trust me to wash any food
