Removing sink and leaving pipes

Hi, I’d like to remove a sink from a spare bedroom. It’s a pedestal sink.

If I turn the isolation valves to off, remove the sink and leave the valves switched to off if this be okay for when I switch the main water supply back on?

Or will I need to use a compression stop end on the ends of the pipes? Do I need to use an olive too?
 
If you’re permanently removing it then you should cut out any dead legs.
 
As per Schooldays advice.
Leaving 'dead legs' means the stagnant water in the pipes could become a breeding ground for bacteria - including the infamous Legionella.
So cut back to just short of junction with main pipes and then cap off IF it's a permanent job.
