can i just ask why does it matter if they turn, as your using roller catches, just grab the knob then push ir pull depending whuch side of the door you are on?

I might be misunderstanding (I'm a novice DIYer), but I assumed that if the knobs turn and there's no mechanism for them to activate, they would seem loose. Is that not the case? Will they still spring back if turned?

No to all, its the latch that is sprung not the handle.

If lined up perfectly you could still fit the bar through the door in a very tight hole and dare I say it, use something like "Stikall" :D:D to hold it tight.

Added the bar for extra support, didn't want the Stikall to get lonely. :D:D:D

Some of this on the inside of the handle will stop it turning.

There is a spring in the base of the handle. The handles won't have and slack/play in them if the springs in place.
The will turn much easier with no 'load' of a lock.

Used a bit of rubber pipe on our W.C. thumbturn lock. When first fitted, if you rattled the handle a couple of times and it would unlock itself. Cut the pipe that fitted the hole tightly, and the bar fitted the pipe centre tightly. Just right. Worried it might loosen over time, but it hasn't. All good.

    Do knobs have springs?

No, you're right there. Didn't read the post properly.

Knobs rely on the lock spring, while handles have on their own spring.

cheap door knobs dont usually have the springs, but good quality knobs do have springs.

i must admit though i hate fitting knobs as rule. even with the 75mm latch you can never get a firm grip on the actuall knob when operating from the push side of the door, especially noticeable for the elderly customers who have grip/hand problems.
