When I install new internal doors, I want to be able to remove them easily as I do work around the house. They are likely to be oak style doors and I want brushed stainless steel door furniture. Ideally the hinges would be good quality (ball bearing) hinges but are there hinges available of this kind of quality with a removal pin? Alternatively a cheaper removable pin hinge which could then be replaced by a good quality hinge with screw holes in an identical arrangement?

This is the way to go. Just be careful that the ones you use allow enough clearance against the frame and architrave to lift the door off.
If its not a stupid question, what do I need to look for exactly to ensure adequate clearance? I assume the issue arises as I open the door, go to lift it off then realise the door will hit the architrave above?
Yes, look at the existing set up, if it would hit now, chances are it will with lift off hinges. This then would mean fitting off set ones to allow clearance.
